Ingredients You Will Need

Okay, let’s gather our ingredients. I am a big fan of using simple stuff, so no worries here!

  • 1 cup (2 sticks) unsalted butter, softened – Don’t try using cold butter or melted butter, soften that butter for PERFECT result. ok? ok!
  • ½ cup granulated sugar
  • ¼ cup powdered sugar – also called icing sugar, or confectioner’s sugar, just for extra information hehe
  • 2 ¼ cups all-purpose flour
  • 2 tablespoons culinary grade matcha powder – YES the matcha you use MATTER for the color! if it doesn’t have a vibrant color, you need to change.
  • Pinch of salt
  • Optional: sprinkle of sugar or even more matcha

How To Make Matcha Shortbread Cookies

Let’s do this! Remember, it is SUPER EASY! Just relax, follow these steps, and we will get cookies. YAY!

Prep the Dough: 

In a  bowl, cream together the softened butter, granulated sugar, and then powdered sugar. Mix them until smooth and well combined. Don’t worry about making this perfectly smooth; we’re aiming for “just combined.”

Add Dry Ingredients: 

In a bowl, you whisk together the flour, matcha powder, and salt. Then, gradually you add this dry mixture to the butter-sugar mixture and mix it until it just forms a dough. The key is to not overmix; we are aiming for just right and easy dough

Form the Dough: 

Divide the dough in two and press it on a plastic film. Roll it into a 2inch diameter log, you’ll have to form the dough to the size you wish. Or use a fun cookie cutter if you are into it. We love fun! Once you have shaped the dough like a perfect cookie log (or any other shape if you wish) place in fridge to harden the dough (minimum of 30 minutes) .

Preheat Time: 

When the dough is nice and firm from chilling, preheat your oven to 325°F (160°C). Getting ready to have your place smell like a magical bakery! YESSS!

Slice and Bake: 

Remove the cookie dough and slice into round shapes, between ⅓ and ½ inch thick, place on parchment-lined baking sheets (leave space between cookies), and sprinkle additional matcha and sugar (if you wish!).

Bake Matcha Shortbread Cookies: 

Bake for 12-15 minutes, until the edges are lightly golden brown, and then enjoy watching them brown into perfection, and then pull out because those will be like the PERFECT cookie color and shape EVER!. The base will be a lighter color; don’t worry they’re done, and don’t try overbaking them as they can be hard!

Cool It: 

Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. This step prevents them from breaking, and gives them their chance to cool!

  • Room Temp Butter: Always start with softened butter. It makes it MUCH easier to mix everything correctly! If it is to warm and too much melted, place it back in the fridge for a while!
  • Don’t Overmix: Seriously, just until the dough forms, and THAT’S IT. You need to trust me on this one: overmixing means fewer soft cookies, and NO ONE wants that!
  • Chill Time: Chilling the dough makes it easier to slice, and it will avoid your cookie shapes to loose definition, which might give irregular sizes and a mess when trying to form perfect round slices. Chill for best results and PERFECT shape. I recommend doing it between 30 min and 2hours. It really makes A DIFFERENCE!
  • Good Quality Matcha: Use high-quality culinary matcha. It’ll give you the BEST color AND flavor. trust me and my tips because IT MATTER.
  • Perfect Baking Time: the time for the cookies is very important, if it is too short or too long, it might damage it’s look and taste and it is REALLY something to be taken seriously! Try sticking with 12-15 min! Don’t forget that we bake this to perfection.
  • Presentation is EVERYTHING: you know how important the presentation can be sometimes. Well when you serve your matcha shortbread cookies use a cute platter or tray to offer.
