Instructions
Prep the Dough: In a bowl, cream together the softened butter, granulated sugar, and powdered sugar until smooth and well combined. No need for perfection—just mix until combined.
Add Dry Ingredients: In a separate bowl, whisk together the flour, matcha powder, and salt. Gradually add the dry mixture to the butter-sugar mixture. Mix until the dough just comes together. Avoid overmixing!
Form the Dough: Divide the dough in half and shape each portion into a log about 2 inches in diameter. Wrap in plastic film and refrigerate for at least 30 minutes to firm up.
Preheat the Oven: Preheat your oven to 325°F (160°C) once the dough is firm. Line baking sheets with parchment paper.
Slice and Bake: Slice the dough into rounds about ⅓ to ½ inch thick. Place them on the prepared baking sheets, leaving some space between each cookie. Sprinkle with extra sugar or matcha, if desired.
