The BEST Divinity Candy is soft, fluffy, and perfectly sweet with a classic melt in your mouth texture. Made with simple pantry ingredients, this old fashioned Southern candy sets beautifully and holds its shape every time. It is a holiday favorite that looks impressive but is completely doable at home with the right timing and temperature.

Ingredients

  • 2 egg whites, room temperature
  • 2 ½ cups granulated sugar
  • ½ cup water
  • ½ cup light corn syrup
  • ⅛ teaspoon salt
  • ½ cup finely chopped pecans, optional
  • 1 ½ teaspoons vanilla extract


Instructions

  1. Line a large baking sheet with parchment paper and set aside. Butter two teaspoons and set aside for scooping later.
  2. Let the egg whites sit at room temperature for about 30 minutes.
  3. In a large microwave safe glass measuring cup, combine the sugar, water, corn syrup, and salt. Heat on high for 4 minutes, then stir.
  4. Continue heating the syrup in 2 minute increments, stirring between each, until it reaches the hard ball stage at 260°F.
    Once the syrup reaches about 250°F, reduce heating to 1 minute increments, checking the temperature each time.
  5. When the syrup is close to being done, begin beating the egg whites on medium speed until stiff peaks form.
  6. Increase the mixer speed to high and slowly and carefully pour the hot syrup into the egg whites in a steady stream.
  7. Continue beating for 15 to 20 minutes, until the mixture loses its glossy shine and holds its shape when dropped onto parchment.
  8. Quickly stir in the vanilla extract and pecans, if using.
  9. Using the buttered teaspoons, drop rounded spoonfuls of divinity onto the prepared baking sheet.
  10. Let the divinity sit at room temperature until dry to the touch, preferably overnight.

Notes

  • Divinity sets best on dry, low humidity days.
  • If the candy spreads too much, it needs more beating time.
  • A candy thermometer is highly recommended for best results.
  • Do not refrigerate divinity, as moisture will affect the texture.
