These Power Breakfast Cookies are healthy, easy to make, and naturally sweetened with banana and maple syrup. They’re packed with oats, flaxseed, and a touch of chocolate—perfect for a grab-and-go breakfast or snack that keeps you full and energized.

Ingredients

  • 1 ripe banana, mashed
  • 1 cup rolled oats
  • 1/2 cup oat flour or all-purpose flour
  • 1/4 cup semi-sweet or dark chocolate chips
  • 1 tablespoon ground flaxseed
  • 1 teaspoon chia seeds
  • 1/4 cup maple syrup or honey
  • 1/4 cup melted coconut oil or butter
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a large bowl, mash the banana until smooth.
  3. Stir in the oats, flour, chocolate chips, flaxseed, chia seeds, maple syrup (or honey), coconut oil (or butter), vanilla, baking powder, and salt. Mix until well combined.
  4. Chill the dough for 10 minutes to help it firm up.
  5. Scoop the dough onto the lined baking tray and gently flatten each cookie.
  6. Bake for 12–14 minutes, until the edges are golden and the tops are set.
  7. Let cool completely before serving.

Notes

  • For a protein boost, you can stir in a scoop of vanilla protein powder and reduce the flour slightly.
