This fast bread recipe makes soft, fluffy homemade bread using instant yeast and simple pantry ingredients. Perfect when you want fresh bread without long rising times.

5½ cups bread flour or all-purpose flour (about 28 oz, spooned and leveled)
3 teaspoons instant yeast (10 g)
4 tablespoons sugar (2 oz)
2 cups warm milk (110°F) or water
1½ teaspoons salt
¼ cup melted unsalted butter (2 oz)
Optional: egg wash for brushing tops
Instructions
Heat milk to 110–115°F.
In the bowl of a stand mixer fitted with the dough hook, combine flour, instant yeast, sugar, and warm milk. Mix for 1 minute.
Add salt and melted butter. Mix on speed 2 for 5 minutes.
If dough is too sticky, add flour 1 tablespoon at a time. If too dry, add 1–2 tablespoons water.
Perform a windowpane test. If dough tears, mix 2 more minutes.
Knead dough lightly on a floured surface and form into a smooth ball.
Place dough in an oiled bowl, cover, and let rise in a warm place for 25 minutes or until doubled.
Preheat oven to 375°F.
Divide dough into 2 loaves. Let rest 20 minutes.
Brush with egg wash if desired and slash tops.
Bake 25–30 minutes, until golden brown and internal temperature reaches 190–200°F.
Cool slightly, slice, and serve.
Notes
Instant yeast is required for fast rise times.
This bread freezes well once cooled completely.
You can shape into rolls or hoagies instead of loaves.
