These healthy tahini cardamom cookies are vegan, gluten-free, naturally sweetened, and full of cozy spiced flavor. Easy to make and so satisfying!

Ingredients

Scale
  • 1/2 cup (80g) gluten-free flour
  • 1/2 cup (50g) ground almonds
  • 1/2 tsp cinnamon
  • 1/41/2 tsp cardamom
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup (4 tbsp) tahini
  • 1/4 cup (4 tbsp) maple syrup
  • Sesame seeds, for topping


Instructions

  1. Preheat oven to 350°F (180°C). Line a baking sheet with parchment.
  2. In a bowl, whisk flour, ground almonds, cinnamon, cardamom, baking powder, and salt.
  3. Add tahini and maple syrup. Stir until a dough forms.
  4. Roll into 10–12 balls, place on baking sheet, and press into flat discs.
  5. Sprinkle with sesame seeds.
  6. Bake for 12–15 minutes until edges are golden.
  7. Cool completely before enjoying.

Notes

  • Use runny tahini for best texture.
  • Flatten more for crispier cookies.
  • Cardamom flavor is strong adjust to your taste.
