These Strawberry Oatmeal Donuts are naturally sweet, soft, and packed with fresh fruit. Perfect for breakfast or snack, and freezer-friendly too!

Ingredients

  • ¾ cup old-fashioned oats
  • ½ cup all-purpose flour
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 ripe banana
  • ½ cup chopped fresh or dried strawberries
  • 1 egg
  • 2 tablespoons maple syrup or honey
  • ¼ cup vanilla Greek yogurt
  • 1 tablespoon avocado oil or melted coconut oil
  • ½ teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F and lightly grease a donut pan.
  2. In a large bowl, whisk together oats, flour, baking powder, and salt.
  3. In a separate bowl, mash the banana and whisk in egg, maple syrup, yogurt, oil, and vanilla.
  4. Add wet ingredients to the dry and stir just until combined.
  5. Fold in chopped strawberries gently.
  6. Spoon the batter into the donut pan, filling each cavity evenly.
  7. Bake for 12 to 14 minutes or until golden and a toothpick comes out clean.
  8. Cool slightly before removing from the pan and drizzle with optional yogurt glaze.

Notes

For a glaze: Mix 2 tablespoons Greek yogurt with 1 teaspoon maple syrup or a bit of powdered sugar. Drizzle over cooled donuts.
To make these dairy-free, sub coconut yogurt and oil, and use a flax egg.

Want to try these in the air fryer? Spoon the dough into lightly greased silicone donut molds, place them in your air fryer basket, and cook at 320°F (160°C) for 8 to 10 minutes until set and golden on top. Cool slightly before popping them out.
