Rich, gooey brownies topped with toasted marshmallows and crunchy graham crackers. It’s the ultimate campfire treat in brownie form!
Ingredients
Scale
For the Brownies:
1 cup (2 sticks) unsalted butter
2 cups granulated sugar
1 cup unsweetened cocoa powder
½ teaspoon salt
1 teaspoon vanilla extract
4 large eggs
1 ½ cups all-purpose flour
For the S’mores Topping:
10 oz bag large marshmallows
2 cups graham crackers, broken into pieces
Instructions
Preheat and Prep: Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper for easy removal.
Melt the Butter: Melt the butter in a saucepan over medium heat until smooth. Remove from heat.
Add Sugar, Cocoa, and Salt: Whisk the sugar, cocoa powder, and salt into the melted butter. The mixture will be thick—perfect for brownies!
Mix in Vanilla and Eggs: Stir in the vanilla extract, then add the eggs one at a time, mixing well after each addition.
Add the Flour: Gradually add the flour and mix until just combined. Avoid overmixing to keep the brownies tender.
Bake the Brownies: Pour the batter into the prepared pan and bake for 25–30 minutes. Check for doneness around 25 minutes; the center should be slightly soft.
Prepare the Toppings: While the brownies are baking, break the graham crackers into small pieces.
Add Marshmallows: Once the brownies are out of the oven, immediately top them with marshmallows, covering the surface evenly.
Toast the Marshmallows: Place the pan under a low broiler for 1–2 minutes. Watch carefully and remove once the marshmallows are golden brown and toasted.
Add Graham Crackers: Sprinkle the graham cracker pieces over the toasted marshmallows.
Cool and Enjoy: Let the brownies cool for at least 20 minutes before slicing. Serve and enjoy this gooey, chocolatey treat!
Notes
Use Quality Cocoa Powder: Opt for high-quality unsweetened cocoa powder for a richer chocolate flavor.
Don’t Overmix: When adding the flour, mix until just combined to keep the brownies fudgy and tender.
Keep an Eye on the Broiler: Toasting marshmallows happens quickly! Stay close to the oven and watch carefully to prevent burning.
Line the Pan: Parchment paper makes it easy to lift the brownies out for clean slicing.
Cool Before Cutting: Let the brownies cool for at least 20 minutes to make slicing easier and avoid marshmallow mess.
Customize Toppings: Add chocolate chips, crushed nuts, or even peanut butter drizzle for an extra twist!
Storage: Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
