Healthy no bake thin mint cookies made with dates, walnuts, and mint. Just like the classic but better-for-you, vegan, and freezer-friendly!

Ingredients

Scale
  • 2 cups raw walnuts (soaked, drained)
  • 1 cup Medjool dates, pitted
  • 1/3 cup cacao powder
  • 2 tsp mint extract
  • 3/4 cup chocolate chips
  • 23 tbsp coconut oil
  • Sea salt (optional, for topping)


Instructions

  1. Soak walnuts overnight or for 2 hours in warm water. Drain and rinse.
  2. In a food processor, blend walnuts and dates until sticky and gooey.
  3. Add cacao powder and mint extract. Blend until smooth.
  4. Chill dough for 30 minutes (optional).
  5. Roll into balls and flatten into thin discs. Freeze for 1 hour.
  6. Melt chocolate chips with coconut oil. Dip each cookie until coated.
  7. Place on parchment, sprinkle with sea salt (if using). Freeze 30 more minutes.

Notes

For best texture, use soft Medjool dates and chill dough before shaping. Store between parchment layers to avoid sticking.
