These No Bake Coconut Cream Balls are rich, creamy, and filled with sweet coconut flavor. The soft coconut center mixes beautifully with the smooth chocolate coating, creating a candy shop style treat that chills quickly and takes only minutes to make. They are perfect for holidays, parties, gifting, or keeping in the refrigerator for a quick sweet bite.

Ingredients

  • 2 and one half cups shredded coconut
  • 1 cup sweetened condensed milk
  • One half teaspoon vanilla extract
  • 1 cup powdered sugar
  • One half cup chopped nuts optional
  • 8 ounces melted white chocolate or semi sweet chocolate


Instructions

  1. In a large bowl mix together the shredded coconut, sweetened condensed milk, vanilla extract, powdered sugar, and optional nuts until a thick dough forms.
  2. Roll the mixture into one inch balls and place them on a parchment lined tray.
  3. Refrigerate for 30 minutes or until firm.
  4. Melt the chocolate in a microwave safe bowl in 30 second intervals stirring each time until smooth.
  5. Dip each chilled coconut ball in the melted chocolate and return it to the tray.
  6. Refrigerate for another 20 minutes or until the chocolate is fully set.
  7. Serve chilled or at room temperature.

Notes

  • If the mixture feels too soft to roll add a little extra shredded coconut until it firms up.
  • Use white chocolate for a sweeter creamier finish or semi sweet chocolate for a richer contrast.
  • These coconut balls freeze beautifully and can be stored for up to two months.
  • Sprinkle extra coconut on top of the freshly dipped balls for a pretty snowy finish.
