These No Bake Coconut Cookies are soft, chewy, and perfectly sweet with rich coconut flavor. Made with just 3 simple ingredients, they’re ready in minutes and naturally gluten free.

Ingredients

  • 3 cups shredded coconut (unsweetened or sweetened)
  • ½ cup powdered sugar
  • ⅔ cup sweetened condensed milk


Instructions

  1. Line a large plate or tray with parchment paper.
  2. In a mixing bowl, stir together shredded coconut, powdered sugar, and condensed milk until a sticky dough forms.
  3. Scoop out portions with a cookie scoop or spoon. Roll into balls, then gently press into cookie shapes.
  4. Place cookies on the parchment-lined tray.
  5. Refrigerate for at least 30 minutes, or until firm enough to hold their shape.

Notes

  • Use unsweetened shredded coconut for less sweetness, or sweetened for a richer flavor.
  • If dough feels too sticky, add 1–2 extra tablespoons of shredded coconut.
  • These cookies can also be rolled into coconut balls instead of flattened.
