These No Bake Coconut Cookies are soft, chewy, and perfectly sweet with rich coconut flavor. Made with just 3 simple ingredients, they’re ready in minutes and naturally gluten free.

3 cups shredded coconut (unsweetened or sweetened)
½ cup powdered sugar
⅔ cup sweetened condensed milk
Instructions
Line a large plate or tray with parchment paper.
In a mixing bowl, stir together shredded coconut, powdered sugar, and condensed milk until a sticky dough forms.
Scoop out portions with a cookie scoop or spoon. Roll into balls, then gently press into cookie shapes.
Place cookies on the parchment-lined tray.
Refrigerate for at least 30 minutes, or until firm enough to hold their shape.
Notes
Use unsweetened shredded coconut for less sweetness, or sweetened for a richer flavor.
If dough feels too sticky, add 1–2 extra tablespoons of shredded coconut.
These cookies can also be rolled into coconut balls instead of flattened.
Chill longer for a firmer texture, or serve sooner for a softer, chewier bite.
Store in the fridge for up to 1 week or freeze for up to 2 months.
