Make these chewy, chocolatey No-Bake Chocolate Coconut Oat Clusters in minutes using pantry staples. No oven needed perfect for snacks, lunchboxes, or gifting!
Ingredients
- 2 cups old-fashioned oats
- 1 cup shredded sweetened coconut
- 1 stick (½ cup) salted butter
- 2 cups granulated sugar
- ½ cup unsweetened cocoa powder
- ½ cup milk
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Line two baking sheets with wax or parchment paper.
- In a large mixing bowl, combine oats and shredded coconut. Set aside.
- In a saucepan, melt butter over medium heat. Stir in sugar, cocoa powder, milk, and salt. Bring to a rolling boil and let boil for 2 full minutes, stirring occasionally.
- Remove from heat and stir in vanilla extract.
- Pour the hot mixture over the oat-coconut blend. Stir until fully coated.
- Using a spoon or cookie scoop, drop 1½ to 2 tablespoon-sized mounds onto the prepared sheets.
