Description

Delicious and flavorful Mongolian ground beef noodles made with tender noodles, sweet soy sauce, and garlic. Easy dinner Ready in 30 minutes.

For the Beef and Sauce:

  • 1 lb ground beef (lean preferred)
  • 3 cloves garlic, minced
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 1/2 cup beef broth
  • 2 tbsp hoisin sauce
  • 1 tsp grated ginger (or 1/2 tsp ginger paste)
  • 1/4 tsp red pepper flakes (optional, for heat)
  • 1 tbsp cornstarch
  • 2 tbsp water (for the slurry)

For the Noodles:

  • 12 oz udon noodles (or spaghetti, linguine, or rice noodles)

Optional Garnish:

  • Sliced green onions
  • Sesame seeds


Instructions

  1. Cook the Noodles: Prepare the noodles according to the package instructions. Drain and set aside.
  2. Brown the Ground Beef: Heat a large skillet over medium-high heat. Add the ground beef and cook until browned. Add the minced garlic and cook for another minute until fragrant. Drain any excess grease.
  3. Make the Sauce: In a bowl, whisk together the soy sauce, brown sugar, beef broth, hoisin sauce, grated ginger, and red pepper flakes (if using).
  4. Combine Sauce and Beef: Pour the prepared sauce into the skillet with the ground beef. Stir and let simmer for 3–4 minutes, allowing the beef to absorb the flavors.
  5. Thicken the Sauce: In a small bowl, whisk together the cornstarch and water to form a slurry. Pour the slurry into the skillet and stir until the sauce thickens and coats the beef evenly.
  6. Combine with Noodles: Add the cooked noodles to the skillet. Toss until the noodles are evenly coated with the sauce and beef mixture.
  7. Serve: Remove from heat. Garnish with sliced green onions and sesame seeds if desired. Serve immediately and enjoy!

Notes

  • Use Fresh Ginger and Garlic: For the best flavor, opt for freshly grated ginger and minced garlic instead of pre-minced or powdered versions.
  • Don’t Overcook Noodles: Slightly undercook the noodles before tossing them in the sauce to avoid mushiness as they’ll absorb more liquid in the skillet.
