- 300g cherry tomatoes, halved
- 200g spaghetti
- Zest of 1 lemon
- 1 cup sliced baby chard (or rainbow chard)
- 1 cup baby spinach (or arugula)
- 2 tablespoons olive oil
- Fresh basil leaves (torn, for garnish)
- Freshly grated Parmesan cheese (for serving)
- Salt, to taste
- 3 cups (600ml) boiling water
- Freshly ground black pepper (optional)
Instructions
- Heat olive oil in a large pot over medium heat, then add cherry tomatoes. Cook until tomatoes soften, creating a flavorful sauce.
- Add uncooked spaghetti directly over the tomatoes, sprinkle with lemon zest, and pour boiling water over the pasta to cover.
- Cook for about 5 minutes, stirring occasionally, then stir in sliced baby chard and spinach.
- Cook for another 4-5 minutes until pasta is al dente and greens are wilted.
- Remove from heat, season with salt, and garnish with fresh basil and Parmesan cheese before serving.
Notes
- Water Level: Make sure the water just covers the ingredients. If it looks too low while cooking, add 1/4 cup at a time.
- Gluten-Free: Use your favorite gluten-free pasta and check for doneness a bit earlier than the package says.
- Dairy-Free: Swap Parmesan with dairy-free shredded cheese or a few spoonfuls of creamy dairy-free cheese.
- Adding Protein: Stir in a spoonful of cottage cheese at the end, or top with cooked chicken, shrimp, salmon, or scallops.
