This High Protein Raspberry Cheesecake is creamy, lightly sweet, and packed with protein from cottage cheese, cream cheese, and egg. Fresh raspberries add a bright, tangy flavor that pairs perfectly with the rich cheesecake filling. It is an easy single serving dessert that comes together with just a few simple ingredients and makes a satisfying healthy treat.

Ingredients

  • 1/4 cup raspberries
  • 2 oz cream cheese, softened
  • 1/4 cup cottage cheese
  • 1 large egg
  • 2 tablespoons sweetener of choice
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 325°F and lightly grease a small baking dish or ramekin.
  2. Mash the raspberries in a small bowl and set aside.
  3. Add the cream cheese, cottage cheese, egg, sweetener, and vanilla to a blender.
  4. Blend until completely smooth and creamy.
  5. Pour the cheesecake mixture into the prepared baking dish.
  6. Spoon the mashed raspberries over the top and gently swirl them into the batter.
  7. Bake for 30 to 35 minutes, or until the center is just set.
  8. Remove from the oven and let cool to room temperature.
