These date cookies are soft, chewy, and naturally sweetened with Medjool dates. Made with almond flour and maple syrup, they’re gluten-free, dairy-free, and a healthier take on classic cookies.

Ingredients

  • 1 cup Medjool dates (about 10, pitted, packed into the cup)
  • 2 cups almond flour (finely ground, blanched)
  • 2-3 tablespoons maple syrup (optional, for added sweetness)
  • ½ teaspoon almond extract (or vanilla extract)
  • Optional: 1 teaspoon cinnamon, 2 tablespoons dark chocolate chips


Instructions

  1. Place pitted dates in a bowl, cover with boiling water, and soak for 5 minutes to soften.
  2. Preheat oven to 340°F (170°C). Line a large baking sheet with parchment paper and lightly oil it.
  3. Drain dates well, pressing out excess water. Reserve some soaking liquid in case you need to adjust dough.
  4. In a food processor, pulse soaked dates and almond flour until crumbly. Dough should stick together when pressed.

  5. Add maple syrup and almond extract. Blend again. If too dry, add a splash of date water. If too wet, pulse in a little more almond flour.
  6. Roll dough into 10 balls and place on prepared baking sheet. Flatten into cookie shapes with damp or oiled hands.
  7. Bake 8–12 minutes, until edges are golden brown.
  8. Cool on the baking sheet for 10 minutes before transferring to a rack.

Notes

  • Fresh, soft Medjool dates work best. If using Deglet Noor dates, soak longer and add extra sweetener if needed.
  • These cookies don’t spread, so shape before baking.
  • For crunch, press chopped nuts on top before baking.
  • Store in an airtight container at room temp for 3 days, in the fridge for 5–6 days, or freeze for up to 2 months.
