These Healthy Almond Cookies are crisp on the outside, soft inside, and made with just almond flour and maple syrup. Naturally gluten free, dairy free, and refined sugar free, they’re perfect for quick snacks, school lunches, or a wholesome tea-time treat.

Ingredients

  • 1 cup (91 g) superfine blanched almond flour
  • 3 tbsp (1.5 fl oz / 44 ml) pure maple syrup


Instructions

  1. Preheat oven to 350°F (177°C). Line a cookie sheet with parchment paper.
  2. In a mixing bowl, combine almond flour and maple syrup. Stir until dough is crumbly but sticks together when pressed.
  3. Scoop 1 tablespoon portions, roll into balls, and flatten slightly into thick disks.
  4. If desired, press a whole almond into the center of each cookie.
  5. Bake 15–20 minutes until lightly golden brown.
  6. Cool fully on the baking sheet before removing.

Notes

  • Use superfine blanched almond flour for the best texture.
  • Pure maple syrup works best, but honey or agave can be substituted.
  • Smooth edges before baking since cookies won’t spread much.
  • Cookies firm up as they cool, so don’t move them too soon.
