These Greek Almond Cookies are soft inside, lightly crisp on the outside and filled with the bright flavor of fresh orange zest and toasted almonds. They come together with simple wholesome ingredients and bake into rustic little cookies that feel naturally gluten free, Mediterranean inspired and perfect with coffee or tea.

Ingredients

  • 3 cups almond flour
  • Three fourths cup granulated sugar
  • 1 tablespoon orange zest
  • 1 fourth teaspoon salt
  • 3 large egg whites, lightly beaten
  • 1 cup sliced almonds


Instructions

  1. Set your oven racks to the upper and lower thirds and preheat the oven to three hundred fifty degrees. Line two baking sheets with parchment paper.
  2. In a large bowl combine the almond flour, sugar, orange zest and salt until everything is well mixed.
  3. Stir in the lightly beaten egg whites until the dough becomes thick, wet and paste like.
  4. Use a one and one half inch scoop or a tablespoon to form the dough into small balls.
  5. Roll each dough ball in the sliced almonds, breaking some of the almonds into smaller pieces so they stick more easily.
  6. Place the cookies on the prepared baking sheets and gently flatten each one since they will not spread on their own.
  7. Bake on both oven racks for thirteen to fifteen minutes, rotating the sheets halfway through baking, until the cookies turn light golden brown.
  8. Let the cookies cool on the baking sheets for ten minutes, then transfer to wire racks to cool completely.

Notes

  • Use finely ground almond flour for the best tender texture.
  • Break the sliced almonds into smaller pieces with your fingers so they cling to the dough more easily.
  • Let the cookies cool completely because almond flour cookies firm up as they rest.
