Soft, chewy, healthy cookies made with just banana, peanut butter, oats, and cinnamon. Gluten-free, naturally sweet, and perfect for snack prep or lunchboxes.

Ingredients

  • 1 large very ripe banana, mashed
  • 2/3 cup natural peanut butter (or other seed/nut butter)
  • 1 cup whole rolled oats (certified gluten-free if needed)
  • 2 teaspoons cinnamon
  • Optional: 1/3 cup dark chocolate chips, chopped nuts, dried fruit, etc.
  • Optional: Melted chocolate for drizzle


Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment or silicone mat.
  2. In a food processor, blend banana, peanut butter, oats, and cinnamon until thick and cohesive.
  3. If using add-ins, transfer dough to a bowl and fold them in.
  4. Roll into 2-inch balls and flatten slightly on the baking sheet.
  5. Bake for 15 minutes. Cool completely.
  6. For optional drizzle, melt chocolate in 30-second increments and drizzle over cooled cookies.

Notes

Use the ripest banana possible. Chill sticky dough before shaping. Store with parchment between layers. Safe to eat raw for no-bake bites.
