Flourless, naturally sweetened vegan cookies made with oats, walnuts, and dates. Soft, chewy, oil-free, and perfect for a healthy snack or dessert!

Ingredients

Scale
  • 1½ cups (135 g) raw walnuts
  • 1 cup (130 g) pitted regular dates
  • ½ cup (45 g) quick oats
  • ½ cup (35 g) shredded coconut
  • 1 tsp cinnamon
  • ½ tsp vanilla powder (or 1 tsp vanilla extract)
  • ⅓ cup (80 ml) water
  • Pinch of salt
  • Optional: extra crushed walnuts for topping


Instructions

  1. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Add all ingredients to a food processor and blend until evenly combined and sticky.
  3. Scoop heaping teaspoons of dough, shape into balls, and gently flatten on the baking sheet.
  4. Top with extra walnuts if desired.
  5. Bake for 10–12 minutes, until lightly golden.
  6. Let cool completely before removing from tray. Enjoy!

Notes

  • Soak dates if they are dry or tough.
  • For nut-free: use sunflower seeds or pumpkin seeds.
  • Cookies will firm up more as they cool.
  • Store in an airtight container at room temp for 4 days, or freeze for up to 2 months.
