Soft, sweet banana cookies made with ripe bananas, pantry staples, and optional add-ins like nuts or chocolate chips. These cookies are naturally moist, easy to make in one bowl, and perfect for a quick snack or healthy dessert.

Ingredients

  • 1½ cups all-purpose flour
  • 2 medium ripe bananas, mashed
  • ½ cup white sugar
  • ¼ cup unsalted butter, melted
  • ¼ cup chopped walnuts (optional)
  • 1 large egg
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 tablespoon white sugar (for sprinkling)


Instructions

  1. Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a large bowl, mash bananas. Stir in sugar, melted butter, egg, flour, baking soda, and salt. Mix until just combined.
  3. Fold in walnuts, if using.
  4. Drop dough in 3-tablespoon portions onto prepared baking sheet, spacing them 2–3 inches apart.
  5. Sprinkle tops with the remaining 1 tablespoon sugar.
  6. Bake for 15–20 minutes, or until edges are golden and centers are set.
  7. Let cool slightly on the baking sheet before transferring to a wire rack.

Notes

  • Use very ripe bananas with brown spots for best flavor and moisture.
  • For chewier cookies, bake closer to 15 minutes. For cakier cookies, add a few minutes.
