These Danish Oatmeal Cookies are crisp, buttery, and dusted with powdered sugar for a light, elegant finish. Made with oats and pecans, they’re simple, nutty, and perfect for coffee breaks, holiday trays, or gifting.

  • 1 cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup confectioners’ sugar
  • 2 teaspoons vanilla extract
  • 1 cup rolled oats
  • 1 cup chopped pecans
  • 1 tablespoon confectioners’ sugar (for dusting)


Instructions

  1. Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a large mixing bowl, cream butter, 1 cup confectioners’ sugar, and vanilla until smooth and fluffy.
  4. Stir in the flour mixture until just combined. Gently fold in oats and pecans.
  5. Drop dough by scant tablespoons onto the prepared baking sheet, spacing slightly apart.
  6. Bake 18–20 minutes, or until lightly golden around the edges.
  7. Allow cookies to cool completely on a wire rack.
  8. Dust generously with confectioners’ sugar before serving.

Notes

  • For a richer flavor, toast the pecans before folding into the dough.
  • Cool fully before dusting or the sugar will melt into the cookies.
  • Store in a tin or airtight container lined with parchment to keep them crisp.
