These healthy cranberry almond cookies are soft, chewy, and naturally sweetened with maple syrup. Made with almond flour, they’re gluten-free, easy to make, and perfect for snacks, school lunches, or holiday baking.

Ingredients

  • 2 cups blanched almond flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ⅓ cup butter, melted (or coconut oil)
  • ⅓ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup dried cranberries (or dried pineapple, mango, etc.)


Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together almond flour, baking soda, and salt.
  3. In another bowl, whisk melted butter and maple syrup until smooth. Add the egg and vanilla and whisk again.
  4. Combine the dry mixture with the wet and stir until fully blended. Fold in dried cranberries or other dried fruit.
  5. Scoop tablespoon-sized amounts of dough onto baking sheets. Flatten gently to about ⅜ inch thick.
  6. Bake for 9 to 14 minutes, or until the edges are golden. Let cool on the sheet for 5 minutes before transferring.
