Creamy, peanut buttery, and naturally sweet, this Cottage Cheese Bark is a high protein frozen treat topped with swirls of melted chocolate and crunchy granola. Made with just five simple ingredients, it’s an easy make ahead snack or healthy dessert that’s perfect straight from the freezer.

Ingredients

Scale
  • 2 cups cottage cheese
  • 2 tablespoons honey
  • 2 tablespoons peanut butter
  • 3 tablespoons chocolate chips
  • 3 tablespoons granola

Instructions

  1. Line a small baking sheet or tray with parchment paper.
  2. Blend the cottage cheese, honey, and peanut butter until smooth and creamy.
  3. Spread the mixture into an even layer about 1/4 inch thick on the prepared baking sheet.
  4. Melt the chocolate chips in the microwave in 20 second intervals, stirring until smooth.
  5. Spoon small dollops of melted chocolate over the cottage cheese mixture and swirl with a knife or toothpick.
  6. Sprinkle the granola evenly over the top.
  7. Freeze for about 3 hours, or until completely firm.
  8. Break into pieces and serve immediately.

Notes

  • Use full fat cottage cheese for the creamiest texture.
  • Freeze leftovers in an airtight container for up to 1 month.
  • Add chopped peanuts, sliced strawberries, shredded coconut, or mini chocolate chips for different flavor variations.
  • Let the bark sit at room temperature for 2 to 3 minutes before eating if it’s very firm.
