These chocolate coconut oat bars are chewy, naturally sweet, and rich with dark chocolate. A wholesome, make-ahead breakfast or snack that tastes like dessert.

Ingredients

  • 1½ cups rolled oats
  • 1 cup shredded coconut
  • ¼ cup maple syrup or honey
  • ¼ cup melted coconut oil or butter
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • 1 cup dark chocolate chips
  • Toasted coconut flakes (for topping)


Instructions

  1. Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, mix oats, shredded coconut, maple syrup, coconut oil, vanilla, and salt until fully combined.
  3. Press mixture firmly into the pan in an even layer.
  4. Bake for 15–18 minutes until golden at the edges. Cool completely.
  5. Melt chocolate chips and spread evenly over the cooled base.
  6. Sprinkle with toasted coconut flakes.
  7. Chill until chocolate is firm.
  8. Slice into bars and store in an airtight container in the fridge.

Notes

  • Use unsweetened shredded coconut to prevent overly sweet bars.
  • For clean cuts, chill bars fully and slice with a hot, sharp knife.
  • These can be frozen up to 2 months just separate layers with parchment.
