Description
These chocolate coconut oat bars are chewy, naturally sweet, and rich with dark chocolate. A wholesome, make-ahead breakfast or snack that tastes like dessert.
Ingredients
- 1½ cups rolled oats
- 1 cup shredded coconut
- ¼ cup maple syrup or honey
- ¼ cup melted coconut oil or butter
- ½ teaspoon vanilla extract
- Pinch of salt
- 1 cup dark chocolate chips
- Toasted coconut flakes (for topping)
Instructions
- Preheat oven to 350°F. Line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, mix oats, shredded coconut, maple syrup, coconut oil, vanilla, and salt until fully combined.
- Press mixture firmly into the pan in an even layer.
- Bake for 15–18 minutes until golden at the edges. Cool completely.
- Melt chocolate chips and spread evenly over the cooled base.
- Sprinkle with toasted coconut flakes.
- Chill until chocolate is firm.
- Slice into bars and store in an airtight container in the fridge.
Notes
- Use unsweetened shredded coconut to prevent overly sweet bars.
- For clean cuts, chill bars fully and slice with a hot, sharp knife.
- These can be frozen up to 2 months just separate layers with parchment.
