  • 1 lb ground beef
  • 2 teaspoons dried oregano, divided
  • 2 teaspoons dried thyme, divided
  • 6 tablespoons butter
  • 1 cup yellow onion, diced
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 5 cloves garlic, minced
  • 4 tablespoons flour
  • 8 cups chicken broth
  • 8 oz uncooked elbow macaroni
  • 1 cup heavy cream
  • 8 oz sharp cheddar cheese, shredded
  • 1 teaspoon white balsamic vinegar
  • Kosher salt and fresh cracked pepper to taste
  • For Croutons: 4 sesame seed buns (diced), 2 tablespoons olive oil
  • Garnish: sliced green onions, extra shredded cheddar cheese


Instructions

  1. Preheat oven to 400°F. Toss diced sesame buns with olive oil and bake until golden and crisp.

  2. In a large pot, brown ground beef with 1 teaspoon oregano, 1 teaspoon thyme, salt, and pepper. Remove and set aside.

  3. In the same pot, melt butter, add onions, carrots, and celery, and cook until softened.

  4. Stir in garlic and remaining herbs for one minute.

  5. Add flour, stirring until vegetables are coated. Cook one more minute.

  6. Deglaze with a splash of broth, then add remaining broth and uncooked macaroni.

  7. Simmer until pasta is al dente, about 7 minutes.

  8. Stir in heavy cream, cheese, vinegar, and cooked beef. Adjust seasoning.

  9. Serve topped with sesame croutons, cheddar, and green onions.
