Scale
- 2 cups (500 ml) water
- 2 tablespoons dried butterfly pea flowers
- 1 teaspoon fresh ginger, sliced
- 1 teaspoon honey (optional)
- Juice of 1 lemon
- 1 teaspoon raw apple cider vinegar
Instructions
- Boil the water in a saucepan. Add sliced ginger at this stage to infuse the base.
- Once the water reaches a rolling boil, remove from heat. Add the dried butterfly pea flowers.
- Let the mixture steep for 10 minutes to allow full color and flavor to develop.
- Strain the tea if you prefer a clear drink, or leave the flowers in for a rustic look.
- Stir in honey, lemon juice, and apple cider vinegar. Watch the color shift from deep blue to bright purple!
- Serve warm or let it cool slightly and pour over ice for a refreshing version.
Notes
- This recipe makes 2 servings.
- Adjust the honey to your taste. I use ½ teaspoon per cup for just a hint of sweetness.
- Store extra in a glass jar in the fridge for up to 3 days.
- For a bubbly version, mix cooled tea with sparkling water or kombucha.
- The longer the steep, the bolder the flavor and color.
