Soft, chewy Almond Joy Cookies made with shredded coconut, semi-sweet chocolate chips, and chopped almonds. A perfect candy bar-inspired treat!

Ingredients

  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup shredded sweetened coconut
  • ¾ cup semi-sweet chocolate chips
  • ½ cup chopped almonds


Instructions

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. Cream butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  3. Beat in egg and vanilla until fully combined.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Add to wet ingredients and mix until just combined.
  5. Fold in coconut, chocolate chips, and almonds.
  6. Scoop dough into balls using a 2-tablespoon scoop. Place on prepared baking sheet.
  7. Bake 9–11 minutes until edges are golden and centers are slightly underbaked.
  8. Cool on baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • For a bakery-style finish, press a few chocolate chips and coconut flakes on top before baking.
  • You can toast the almonds beforehand for extra flavor.
  • Dough freezes well: scoop, freeze until solid, then store in bags. Bake from frozen with 1–2 extra minutes.
  • For a nut-free version, simply leave out the almonds or substitute with more coconut or chocolate chips.
