Ingredients

  • 1 cup almond flour (superfine, blanched)
  • ¼ tsp baking powder
  • ¼ tsp sea salt
  • 2½ tbsp coconut oil (melted)
  • 2 tbsp maple syrup
  • ½ tsp vanilla extract
  • ½ cup chocolate chips (dairy-free or dark)


Instructions

  1. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together almond flour, baking powder, and sea salt.
  3. Stir in melted coconut oil, maple syrup, and vanilla until a dough forms.
  4. Fold in chocolate chips gently.
  5. Scoop about 1 heaping tbsp of dough per cookie, roll into balls, and press slightly on the baking sheet.
  6. Bake for 8–10 minutes until edges are golden and centers are still soft.
  7. Let cool on the pan before transferring to a wire rack.

Notes

  • Cookies won’t spread much, so shape them before baking.
  • For crispier cookies, bake an extra 1–2 minutes.
