These soft, cozy 3 Ingredient Pumpkin Bites come together in minutes and taste like mini pumpkin donut holes. Made with almond flour, pure pumpkin puree, and maple syrup, they’re naturally gluten-free, grain-free, and full of warm fall flavor. Perfect with coffee, for a quick snack, or as a healthy treat during pumpkin season.

Ingredients

  • 1 cup almond flour
  • 3 tablespoons pumpkin puree
  • 3 tablespoons pure maple syrup
  • 1 teaspoon pumpkin spice (optional)

(Optional coating)

  • 1 tablespoon maple syrup
  • 2 tablespoons spiced sugar or cinnamon sugar


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking tray with parchment paper.
  2. In a medium bowl, mix almond flour, pumpkin puree, maple syrup, and pumpkin spice until a soft dough forms.
  3. Roll the dough into small balls (about 1 tablespoon each) and place them on the prepared tray.
  4. Bake for 12–14 minutes until the edges look golden and the centers are set.
  5. Let the bites cool on the tray for 5 minutes, then transfer to a wire rack to finish cooling.
  6. (Optional) For a donut-like finish, brush each bite with maple syrup and roll in cinnamon sugar.

  • Use finely blanched almond flour for the best soft, tender texture.
  • If your pumpkin puree seems watery, blot it lightly with a paper towel before mixing.
