Soft and chewy 3 Ingredient Coconut Oatmeal Bars made with ripe bananas, oats, and coconut. A naturally sweet, healthy snack perfect for breakfast, work, and school.

Ingredients

  • 1½ cups very ripe or overripe bananas, finely mashed
  • 2 cups quick oats
  • ¼ cup unsweetened finely shredded coconut


Instructions

  1. Preheat the oven to 350°F or 175°C. Line an 8×8 inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a large mixing bowl, add the mashed bananas and quick oats. Mix with a spatula until fully combined. The mixture will be very thick.
  3. Stir in the shredded coconut until evenly incorporated.
  4. Transfer the mixture to the prepared pan and spread it evenly, smoothing the surface.
  5. Bake for 20 to 25 minutes, until the bars are set and lightly golden around the edges.
  6. Let the bars cool completely before lifting out of the pan, slicing, and serving.
