๐ง Gorgonzola cheese
๐ฅ Heavy cream + butter
๐ฏ Balsamic vinegar + honey
๐ง Garlic powder, salt & pepper
๐ฟ Fresh parsley + pine nuts
Season & Sear the Steak.
Pat medallions dry. Season with olive oil, salt, pepper & garlic powder. Sear in a screaming-hot cast iron for 4โ5 min per side.
Rest the Steak.
Remove from heat and tent loosely with foil. Rest for 5 full minutes โ this keeps all the juices locked inside the meat.
Make the Gorgonzola Sauce.
Melt butter, add heavy cream, simmer gently. Crumble in gorgonzola and stir until silky smooth. Keep on lowest heat.
Reduce Balsamic & Plate.
Simmer balsamic + honey until syrupy (~10 min). Spoon gorgonzola sauce over steak, drizzle balsamic glaze on top. Serve immediately.
Get the pan screaming hot.
A warm pan steams the steak instead of searing it. Heat cast iron for 3 full minutes before the steak goes in โ you want smoke, not just sizzle.
