Melt butter over medium heat.
Sautรฉ minced garlic for 1โ2 minutes until fragrant. Don't let it brown.
Pour in heavy cream.
Bring to a gentle simmer, stirring constantly for 3โ4 minutes to thicken.
Add Cajun seasoning & spices.
Stir in smoked paprika, cayenne, and black pepper. Adjust heat to taste.
Stir in Parmesan.
Add freshly grated Parmesan off the heat. Stir until silky smooth. Done!
Don't boil after adding Parmesan.
High heat makes cheese grainy. Always add it off the burner and stir quickly.
