Description

This No Bake Snickerdoodle Energy Balls recipe is a quick, healthy way to enjoy the cozy cinnamon-sugar flavor of snickerdoodle cookies without baking. These chewy, naturally sweet bites are made with dates, almond butter, cashews, and cinnamon, and they come together fast in a food processor. Vegan, gluten-free, and perfect for meal prep or grab-and-go snacking.

Ingredients

Units Scale
  • 2 cups raw cashews, soaked overnight or in hot water for 2 hours
  • 1/4 cup smooth almond butter
  • 8 to 10 Medjool dates, pitted
  • 1/3 cup coconut flour or vegan pea protein powder
  • 2 tsp ground cinnamon

For Rolling:

  • 2 tbsp coconut sugar
  • 1 tsp ground cinnamon

  5. Mix coconut sugar and cinnamon in a small bowl.
  6. Roll dough into balls and coat each one in the cinnamon-sugar mix.
  7. Store in the fridge for up to 7 days, or freeze for longer storage.

Notes

  • If your dates are dry, soak them for 10 minutes in hot water before using.
  • Wet your hands slightly when rolling the dough to prevent sticking.
  • For extra protein, substitute protein powder for coconut flour.
  • You can customize with chopped nuts, oats, or even dip in chocolate for a fun variation.
