- 1/4 cup smooth almond butter
- 8 to 10 Medjool dates, pitted
- 1/3 cup coconut flour or vegan pea protein powder

- 2 tbsp coconut sugar
- 1 tsp ground cinnamon
Instructions
- Soak cashews overnight with a pinch of salt, or soak in hot water for 2 hours. Rinse and drain well.
- In a food processor, blend soaked cashews, dates, and almond butter until smooth and sticky.
- Add coconut flour, cinnamon, and a pinch of salt. Blend again until a dough forms.
- Chill the dough for 1 hour in the fridge or 20 minutes in the freezer.
- Mix coconut sugar and cinnamon in a small bowl.
- Roll dough into balls and coat each one in the cinnamon-sugar mix.
- Store in the fridge for up to 7 days, or freeze for longer storage.
Notes
- If your dates are dry, soak them for 10 minutes in hot water before using.
- Wet your hands slightly when rolling the dough to prevent sticking.
- For extra protein, substitute protein powder for coconut flour.
