- 1 cup soft pitted dates (preferably Medjool)
- 1/2 cup shelled pistachios
- 1/4 cup shredded coconut (plus more for rolling)
- 1 tablespoon almond butter or tahini (optional)
- Pinch of salt
Instructions
- Add dates and pistachios to a food processor and pulse until crumbly.
- Add shredded coconut, pinch of salt, and almond butter or tahini if using. Blend until mixture sticks together when pressed.
- Roll into small balls using about 1 tablespoon of mixture for each.
- Roll in additional shredded coconut to coat.
- Chill in the fridge for 30 minutes to firm up.
Notes
- Use soft Medjool dates; soak if needed.
- Store in the fridge for 1 week or freeze for up to 3 months.
- Great for lunchboxes, snack breaks, or pre/post workout fuel.
- Roll in sesame seeds, crushed pistachios, or cocoa instead of coconut for variation.
