Description

These Cinnamon Dolce Oatmeal Cookies are soft, buttery, and gently spiced—like a cinnamon dolce latte in cookie form. Crinkly on top and melt-in-your-mouth tender inside, they’re made with oat flour, cozy cinnamon, and a powdered sugar coating for the perfect café-style cookie.

Ingredients

  • 1 cup all-purpose flour
  • ½ cup finely blended rolled oats
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ cup softened butter
  • ⅓ cup white sugar
  • 1 egg
  • 1½ teaspoons vanilla extract
  • ¼ cup powdered sugar (for coating)
  • Extra cinnamon (for dusting)

Instructions

  1. Whisk dry ingredients: In a bowl, mix flour, blended oats, baking powder, salt, and cinnamon.
  2. Cream butter and sugar: In a separate bowl, beat softened butter and sugar until light and fluffy.
  3. Add egg and vanilla: Stir in egg and vanilla until smooth.
  4. Combine wet and dry: Gradually add the dry ingredients to the wet mixture until a soft dough forms.
  5. Chill the dough: Cover and chill for 20–30 minutes to firm up.
  6. Preheat oven to 350°F. Line a baking sheet with parchment.
  7. Shape and coat: Roll dough into balls, coat in powdered sugar, and dust with a little cinnamon.
  8. Bake for 10–12 minutes: Cookies should be puffed and crinkly.
  9. Cool completely on the tray before transferring to a wire rack.

Notes

  • Blend oats into a fine flour before measuring.
  • For extra crinkle, dust with more powdered sugar right after baking.
  • These pair beautifully with coffee or chai and freeze well!
