Ingredients
- 1 cup all-purpose flour
- ½ cup finely blended rolled oats
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ teaspoon cinnamon
- ½ cup softened butter
- ⅓ cup white sugar
- 1 egg
- 1½ teaspoons vanilla extract
- ¼ cup powdered sugar (for coating)
- Extra cinnamon (for dusting)
Instructions
- Whisk dry ingredients: In a bowl, mix flour, blended oats, baking powder, salt, and cinnamon.
- Cream butter and sugar: In a separate bowl, beat softened butter and sugar until light and fluffy.
- Add egg and vanilla: Stir in egg and vanilla until smooth.
- Combine wet and dry: Gradually add the dry ingredients to the wet mixture until a soft dough forms.
- Chill the dough: Cover and chill for 20–30 minutes to firm up.
- Preheat oven to 350°F. Line a baking sheet with parchment.
- Shape and coat: Roll dough into balls, coat in powdered sugar, and dust with a little cinnamon.
- Bake for 10–12 minutes: Cookies should be puffed and crinkly.
