Description

Ingredients

  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 to 2 teaspoons Cajun seasoning (adjust to taste)
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1/2 cup reserved pasta water (as needed)
  • 8 oz fettuccine (or your favorite pasta), cooked


Instructions

  1. In a large skillet, melt the butter over medium heat. Add the garlic and cook for 1 to 2 minutes, just until fragrant.
  2. Stir in the heavy cream and bring it to a gentle simmer. Let it cook for 4 to 5 minutes, stirring occasionally, until slightly thickened.
  3. Add the Cajun seasoning, smoked paprika, salt, and pepper. Stir to combine.
  4. Lower the heat and mix in the Parmesan cheese. Stir until the cheese is fully melted and the sauce is smooth.
  5. If the sauce seems too thick, add a splash or two of the reserved pasta water until it loosens up.
  6. Toss in the cooked pasta and mix until everything is well coated.
  7. Serve warm, topped with more Parmesan or extra Cajun seasoning if you like it spicy.
