Description

Perfectly roasted butternut squash that’s tender, flavorful, and ready in minutes! A simple, healthy, and delicious side dish.

Ingredients

Scale
  • 1 medium butternut squash (about 2 pounds), peeled, seeded, and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • A pinch of red pepper flakes (optional)
  • Optional: A drizzle of maple syrup for sweetness

Instructions

  1. Prep the Squash: Peel the butternut squash, remove the seeds, and cut it into 1-inch cubes. Place the cubes in a large bowl.
  2. Add Oil and Seasonings: Drizzle the squash cubes with olive oil and toss to coat evenly. Sprinkle with salt, black pepper, garlic powder, and red pepper flakes if using. Toss again to distribute the seasonings.

  3. Air Fry: Arrange the seasoned squash in a single layer in the air fryer basket. Work in batches if necessary to avoid overcrowding. Cook at 400°F (200°C) for 15–20 minutes, shaking the basket halfway through, until the squash is tender and slightly crispy.
  4. Serve: Transfer the cooked squash to a serving dish and serve immediately. For added sweetness, drizzle with maple syrup before serving. Enjoy!

Notes

  • Cut Uniform Cubes: Make sure the squash pieces are the same size for even cooking.
  • Work in Batches: Avoid overcrowding the air fryer basket to achieve crispy edges.
  • Flavor Variations: Add a pinch of cinnamon or nutmeg for a warm, spiced flavor.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for a quick crisp-up.
  • Maple Syrup Drizzle: Adding a drizzle of maple syrup after cooking enhances the sweetness and gives a caramelized finish.
